Kove’s Kettle Draws Crowd, Eyes National Growth

Elisha Hill co-owns Kove's Kettle and Pork Rinds, a Conway-based business that grew out of a previous operation, Hawk’s Popcorn and Pork Rinds. 

The company maintains the same products and customers but with a new name. Currently, they operate at events across southwest Missouri. However, they are working on federal inspection to expand nationwide. All products, including 29 flavors of pork rinds and their wheat-based "bacon bites," are made in Conway. Hill’s husband creates most of the flavors. 

The business has a family history, starting with Hill's aunt selling kettle corn. They were the first business in Missouri to undergo state inspection for this product type. 

They often sell hundreds of bags per event, leveraging the fact that few festivals offer pork rinds. 

Future plans include a website, social media growth, and wider distribution, but their core strategy remains simple: show up, set up, let people try it, and they usually return.
